បាយឡុកឡាក់ សាមញ្ញៗ តែជាអាហារដ៏ពេញនិយមរបស់ប្រជាជនខ្មែរ។ វាជាម្ហូបដែលងាយស្រួលរក មិនថាអ្នកនៅកន្លែងណានៃប្រទេសកម្ពុជា។ សម្រាប់ខ្ញុំ ក៏ដូចប្រជាជនខ្មែរផ្សេងដែរ ម្ហូបនេះក៏ជាចំណូលចិត្តរបស់ខ្ញុំដែរ។ គ្រប់ពេលដែលយើងឮ​ឈ្មោះ ឡុកឡាក់ៗ ឬក៏ពេលដែលក្លិនឈ្ងុយរបស់វាហោះប៉ះច្រមុះ ឬក៏ពេលដែលបានភ្លក់វាមួយម៉ាត់ដំបូង ធ្វើឲ្យពេលវេលានោះ ក្លាយជាពេលដែលពោរពេញទៅដោយសេចក្តីសុខមួយគ្រាដែរ។ វាក្រើនរំលឹកយើងពីភាពកក់ក្តៅ និងភាពបុិនប្រសព្វរបស់ប្រជាជនខ្មែរ ជាពិសេសសិល្បៈម្ហូបអាហារខ្មែរដ៏អស្ចារ្យ និងសម្បូរបែប ដែលតែងតែត្រូវបានគេមើលរំលង ប៉ុន្តែវាស័ក្តិសមនឹងត្រូវបានប្រជាជនទូទាំងពិភពលោកដឹងឮ​ នឹងបានសាក។

Bai Lok Lak, or Lok Lak with rice, is a humble yet beloved Cambodian beef stir-fry, found almost everywhere across the country. It is, like many others, one of my favorites. Each time we hear its name, catch its familiar aroma, or take the first bite, it becomes more than a meal—it becomes comfort. It recalls the warmth of everyday Cambodian life and a rich food culture that is often overlooked, yet deeply deserves to be seen, heard, and tasted by the wider world.
